I decided to just bring cash with me when I come on holiday but I've just read online that we can only bring $500. Is this true? I'll have to change my cash back to £ if it is. Help please :)

Just bring traveller's cheques. Not an issue. I don't believe there is a limit on that and you don't have worry about changing them back to £s.
